Alexis and Vianney Madelin can be proud of MADDAM. Since the first marketing, their craft beers have kept accumulating medals. The two cousins grew up in the Burgundy vineyard. Later, Alexis moved to the Australian vineyards while Vianney, after a training to be cabinetmaker, moved on to design objects for premium brands of champagne and spirits. Then, Both set up their brewery in the harvest street of Chablis where wine remains king, to offer craft and organic beers whose recipes are inspired from fine cuisine. The barley varieties, 100% from Burgundy, are meticulously selected. Unfiltered, unpasteurized and with a unique 60-day brewing process, MADDAM beers are distinguished by their creamy foam, delicate bubbles and a texture perfectly balanced .
Produced from fermentation at a low temperature to maintain the natural malty notes from the barley utilized, it is a very thirst-quenching and light beer.
The brewery's flagship beer, thinely hopped, malted and smoked character. It is a beer well balanced and in finenesse.
Wheat beer with a very refreshing aroma of citrus fruits and sweet spices. A pretty thirst-quenching beer.
Beer made from a blend of three different malts which are giving this colour and this particular character. Three sweet spices express a rich and balanced aroma.
Aged in oak barrels of 1st and Grand Crus Chablisiens, these exceptionally subtle and warm beers are part of the Brasseries' series of special vintages. This technique creates round and winy notes.
A beer with an assertive character reminding the purely Belgian triple style. It is a sweeter beer than the others with compotes and cooked fruits aromas. Nothing matches better than a chocolate dessert and Clovis & François!
